Potstickers are my original love language, but they definitely don’t have to be fancy to woo me — some of my favorites still cost about 50 cents a piece at the beloved dumpling shop around the corner from my house in San Francisco.

But I do appreciate a fancy dumpling as well — it is fun to see potstickers (and Japanese gyoza) as vessels for experimentation at all kinds of restaurants. Here are some that really hit the mark with me at upscale Chinese, Japanese and Vietnamese restaurants in California.
