Recipe Hack: Blue Meanie Cake

Recipe Hack: Blue Meanie Cake

BY TAMARA PALMER

I am not a baker, but I had a ball conceptualizing the Blue Meanie Cake, a blueberry loaf with butterfly pea flower and chamomile essence named after the villainous Blue Meanies in The Beatles’ 1968 animated film, Yellow Submarine. Blue Meanies hate music and took over Pepperland by silencing and freezing it.

All I did was bake up Taste of Home’s Blueberry Loaf Cake and add two key tweaks: I stirred in two teaspoons of Suncore Foods’ Butterfly Pea Supercolor Powder into the batter and i placed some dried chamomile flowers on top when it came out of the oven so that it could add a lightly steamed chamomile scent to the cake.

I couldn’t be more proud.
