EZ Al Pastor Pineapple

Check the technique: I always want more pineapple in my al pastor, so I decided to stuff half of this Oaxacan Gold pineapple with a bed of Plenty baby kale, Rancho Llano Seco al pastor seasoned pork taco meat (which isn’t pork cooked on a trompo), avocado, cilantro and onion. The addition of kale, which cooks on the bottom, makes this almost a salad — but it’s really a total treat.
Technique: Cut pineapple in half and hollow out with a knife (and spoon, if necessary). Remove the core and crush the soft flesh. Line hollowed pineapple with kale leaves. Sauté meat in water and a touch of oil until cooked, about 15 minutes. Spoon meat on kale and top with minced onion, cilantro, sliced avocado and crushed pineapple.
