Phoebe Bridgers Has a Vegan Taco

Phoebe Bridgers is one of the artists I enjoyed covering at this year’s Outside Lands music festival for GRAMMY.com. I wasn’t familiar with her work before receiving the assignment, but I really enjoyed watching her performance, which had personal significance to her as a kid who grew up going to the fest, and learning about her self-deprecating humor and wit. So I had to order the Phoebe Bridgers vegan taco when I saw it on the menu at HomeState during my recent trip to Los Angeles.
Bridgers’ Maxine taco has great flavor and texture thanks to black beans, shiitake mushrooms, caramelized onion and corn tortilla strips. And there’s a charitable component: $1.25 from each taco is donated to CASA/LA, a nonprofit advocate for kids in the child welfare and juvenile justice systems.
