POV: You're @ Agua Viva, José Andrés' New Rooftop Restaurant

BY TAMARA PALMER
After closing his two restaurants in the SLS Beverly Hills in August 2020, chef and World Central Kitchen humanitarian José Andrés opened two restaurants and two bars inside Conrad Los Angeles. I recently had some snacks at Agua Viva, which is the rooftop restaurant; there’s also the pricier San Laurel inside.
I went at 5:30 so that I could take pictures while it was still light outside and experience the sunset. My corner table had a view of City Hall and the picture above is my attempt to line up the shape of the shiso margarita with that landmark.
Walking into Agua Viva
Build your own tuna handrolls
Gazpacho with king crab addition
Organized Caesar salad (lettuce wrapped in jicama)
Dessert didn’t impress enough to order (and I rarely pass up dessert), but I hope that changes by the time I am able to visit again and try more items.
