How to Get Al Pastor Papi's New Al Pastorta

For his popular Bay Area food truck, Al Pastor Papi, my good friend Miguel Escobedo has lately been creating new specials that reflect how he was born in Mexico City (where he trained in the craft of making al pastor) and raised in the Bay Area, including Keto-friendly tacos made with cheese instead of tortillas and horchata in flavors like banana (er, bachata) and Thin Mintchata. He’s also occasionally been selling squeeze bottles of the two salsas that are currently available on the truck.
But his pièce de resistance so far is the al pastorta, which he’s making in very limited quantities. This week, for instance, he’ll have it on special daily, but will only make five per day. While that’s a bit of a challenge in terms of getting one, you’ll appreciate it that much more if/when you do.
I mean, look at this thing of beauty — the generous slices of pineapple, the melted cheese, the supple black beans and pleasingly soft bun. It’s everything you want in a torta. I have had many APP tacos, but this is a runaway smash. I was given the torta on the house, but I promise that I am not a paid spokeswoman.
